Ingredients:

  • Green onions
  • 1 bell pepper (green, yellow, or red as desired)
  • 1 package of breakfast sausage links
  • 8 eggs (2 eggs per person)
  • 1 tbsp of olive oil
  • Salt and pepper to taste
  1. Dice green onions and bell pepper into small pieces.
  2. Cut breakfast sausage links into small slices.
  3. Add olive oil to the bottom of a 10-inch iron skillet and warm up.
  4. Add the sausage to the skillet and cook until browned.
  5. Add green onions and bell peppers to the skillet.
  6. Mix well and cook 2-3 minutes until the bell pepper softens.
  7. Add eggs over the mixture.
  8. Stir ingredients together until eggs are cooked through.
  9. Add salt and pepper to taste.
  10. Mix up and serve.

Preparation: 15 minutes

Grilling time: 2-3 minutes on each side

Ingredients:

  • Patties
    • ¼ cup olive oil
    • Cracked black pepper rub (with garlic)
    • 2 lbs of beef
  • Buns
  • Mustard or mayonnaise
  • Cheddar cheese slices
  • Butter lettuce
  • Tomato slices
  • Red onion slices
  • Chips
  1. Cut up the tomato and onion into thin slices.
  2. Pull off, wash, and pat dry the butter lettuce leaves.
  3. Mix the olive oil, cracked black pepper rub, and beef together in a large bowl.
  4. Divide the meat into equal portions and form into 1/2-inch thick patties.
  5. Place the patties on the grill over the campfire.
  6. Cook 2-3 minutes and then flip each patty onto the other side.
  7. Cook 2-3 minutes on the other side until the inside is medium or the juices run clear.
  8. Add 1-2 cheese slices to each patty.
  9. Toast the buns open face and face down on the grill for about 1-2 minutes.
  10. Apply mustard or mayonnaise to both sides of the bun.
  11. Place the patty on the bun.
  12. Add tomato, onion, and lettuce as desired.
  13. Add chips as a quick and easy side.

Ingredients:

  • 4-5 green onions
  • 1 jar of dried beef
  • 1/2 tsp garlic powder
  • 2 boxes of cream cheese
  1. Set cream cheese aside to bring up to room temperature.
  2. Cut up 4-5 green onions into small slices. Add to a medium-size bowl.
  3. Cut up 1 jar of dried beef into small slices. Combine into bowl with green onions.
  4. Add 1/2 tsp garlic powder into bowl with green onions and beef.
  5. Add 2 boxes of cream cheese into the mixture.
  6. Mix up completely and serve.
Cream Cheese Dip to Snack on at the Campsite

Preparation: 30 minutes

Bake: 55 minutes

Oven: 350°F

Ingredients:

  • 2 cups unbleached all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp Himalayan sea salt
  • 2 eggs
  • 2-3 overripe bananas
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1 cup pecans
  1. Preheat the oven to 350°F.
  2. Grease the bottom and inner sides of a 9x5x3-inch nonstick baking pan with butter, such as unsalted Kerrygold Pure Irish Butter. Set the pan aside.
  3. In a medium mixing bowl, add 2 cups unbleached all-purpose flour, 1 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp cinnamon, 1/4 tsp nutmeg, and 1/4 tsp Himalayan sea salt. Mix together, leaving a well in the middle, and set aside.
  4. In another small mixing bowl, add 2 eggs that have been lightly beaten, 2-3 overripe bananas that have been well mashed, 1 cup sugar, and 1/2 cup vegetable oil. Mix together.
  5. Add the entire banana mixture to the well of the flour mixture. Stir until almost all of the flour is moist and then add the pecans. Stir until the entire mixture is moist.
  6. Pour the batter into the greased baking pan.
  7. Bake for 55 minutes at 350°F or until a toothpick comes out clean from the middle of the loaf.
  8. Remove from the oven and cool the banana bread loaf in the pan on a wire baking rack for 10-15 minutes.
  9. Remove from the pan and then cool completely on the wire baking rack.
  10. Once completely cool, cut into slices.
