Ingredients:
- Green onions
- 1 bell pepper (green, yellow, or red as desired)
- 1 package of breakfast sausage links
- 8 eggs (2 eggs per person)
- 1 tbsp of olive oil
- Salt and pepper to taste
- Dice green onions and bell pepper into small pieces.
- Cut breakfast sausage links into small slices.
- Add olive oil to the bottom of a 10-inch iron skillet and warm up.
- Add the sausage to the skillet and cook until browned.
- Add green onions and bell peppers to the skillet.
- Mix well and cook 2-3 minutes until the bell pepper softens.
- Add eggs over the mixture.
- Stir ingredients together until eggs are cooked through.
- Add salt and pepper to taste.
- Mix up and serve.
